Guided by the principles of perfumery, measure and combine botanicals to create your first formula, then taste, adjust and discover how small changes can shift its balance, texture and finish. Give your spirit a name, record your recipe and bottle your blend to take home, a personal expression of scent and flavor.

One grain, many ways to transform. Join ONSON on a journey through rice, fermentation, distillation and botanical infusion, exploring the knowledge and drinking traditions that unfold with each stage.

Follow a live demonstration as prepared sato is transformed into spirit, then explore herbs, roots, bark and spices to create your own ya dong, a Thai botanical spirit rooted in local traditions. Compare each stage and leave with two creations to continue the journey beyond The Fields
